The Cuisine

We care a lot to rescue old savours.
The family does everything and the menu includes typical traditional dishes, even old ones with the use of field herbs, which we harvest in spring.
The raw material must have a good quality and comes from our territory with biological production methods.
The meat comes from animals, bred outside by our neighbouring farmers, who guarantee the requirement of natural breeding.
We produce salami and cold pork meat and season them in our cellar.
We bake bread from our wheat, which we stone grind together with other types of flour, ours as well.
The menu varies according to the seasonal products ………… and our creativity.
We combine the traditional Romagna dishes – e.g. tagliatelle, tortelli and gnocchi – even poor dishes like panzanella (bread and vegetable salad), omelettes with any kind of vegetables, soups with various ingredients, which satisfy vegetarians and remind you of dishes from Tuscany.
It must be remembered that our holiday farm is part of “Romagna Toscana” and that the cultural mixture also comprehends food.
In fact, among the appetizers there are “crostini” (canapés) with liver, the typical Tuscan bread without salt as well as several other recipes.
During the periods when we do not have our own products, we buy from farmers with biological production methods.
To serve our holiday farm we have a 500 m2  vegetable garden, which during the warm season allows us to produce tomatoes, beans, onions, carrots, celery, chard, salad, radicchio, baby marrows, peas, potatoes etc.
During the cold months, we grow cardoons, leaks, chard and radicchio.
With our fruit production we make marmalades, which are the base for our cakes all your round. We have blackberries, raspberries, apricots, apples, quinces, grapes, khakis, figs, cherries and before long pears and plums too.
We also offer a menu based on mushrooms and game: wild boar and deer, upon request made on the roasting jack.
Typical dishes: “Tortelli sulla lastra” and fried “piadina”.

We also offer vegetarian and vegan cuisine on request.
